Uncorked & Unrolled: An Evening of Sushi & Pour Pairings
As we prepare to open the doors to our new Wayne location (coming soon), we are taking our tasting classes on the road!
Join us for an exclusive, off-site culinary adventure that brings together the precision of Japanese cuisine and the art of global winemaking.
We’ve partnered with Mr. Sushi of Pompton Lakes to bring you a fully guided, class-style tasting menu. This special evening is co-hosted by our resident wine expert, Tracey, and the restaurant’s master chef and owner. Together, they will pull back the curtain on how crisp white wines and traditional sake interact with complex coastal flavors.
The Tasting Menu & Pairings
We have meticulously mapped out four distinct pairings designed to elevate every bite:
The Sparkler & The Crudo
The Pour: Pierre Sparr Crémant d’Alsace Brut Réserve
The Bite: Yellowtail Jalapeño Crudo (thinly sliced hamachi topped with fresh jalapeño, cilantro, and yuzu ponzu).
The sharp, clean bubbles slice perfectly through the rich hamachi and bright citrus glaze.
The Aromatic White & The Crispy Crunch
The Pour: Essay Chenin Blanc / Roussanne / Viognier
The Bite: Crispy Tuna Bite (crispy sushi rice topped with spicy tuna, avocado, truffle aioli, and scallions).
This lush, textured blend stands up beautifully to the rich truffle aioli and crispy base.
The Traditional Brew & The Master's Nigiri
The Pour: Chiyonosono Shuzo "Shared Promise" Junmai Sake
The Bite: The Chef's Premium Nigiri Selection (Tuna, Salmon Belly, Hamachi, and Albacore Tuna).
A classic, clean Junmai sake designed to respect and elevate the pure, unadorned profile of fresh fish.
The Off-Dry Classic & The Signature Roll
The Pour: Prost Mosel Riesling Feinherb
The Bite: Aburi Salmon Signature Roll (spicy crab and avocado inside, topped with fresh salmon, lightly torched and finished with a yuzu soy glaze and scallions).
A touch of Riesling sweetness beautifully tames the spicy crab and plays off the smoky, torched salmon.
